Apricot Pound Cake

Dried apricots 1/2 cup
Canned apricots 3/4 cup
Butter 2 cups
Sugar 2 cups
Eggs 5
Vanilla essence 1 tablespoon
Refined flour (maida) 2 cups
Baking powder 1 teaspoon
Milk 1/2 cup
Preheat oven to 180° C. Place butter in a bowl, add sugar and beat with a hand blender. Break 2 eggs into the bowl and beat. Break 3 more eggs into the bowl and continue to beat.

Add vanilla essence and beat some more. Sieve together refined flour and baking powder into the bowl and mix with a spoon first. Then beat with a hand blender. Add milk and mix well.

Add both the apricots and mix well. Pour the batter into a silicon cake mould and bake in the reheated oven for 40 minutes. Let it cool, then take it out of the mould. Cut into slices and serve.
